To make this dish even better we’ve concocted a porcini butter recipe to go with your steak, which is so simple to whip up and yet will make your guests feel like their in a restaurant.

HOW TO MAKE STEAK WITH PORCINI BUTTER

Ingredients
25g dried porcini mushrooms
250g butter
4 flat iron steaks
green salad and vinaigrette, to serve

Method
Soak the mushrooms in boiled water for 30 minutes, then drain through a fine sieve. Use a small knob of the butter to sauté the mushrooms for 10 minutes over a medium heat. Set aside to cool. Then put the mushrooms and butter into a processor and whizz together. Put in the centre of a large piece of parchment paper and roll into a cylinder. Wrap in cling film and put into the fridge to firm up.

When you’re ready to cook the steaks, heat a griddle pan or use the barbecue. Lightly oil the steaks all over then season with sea salt. Cook until rare or medium rare. Set aside to rest for 5 minutes, seasoning with black pepper. Top with a thin slice of the butter and serve with a green salad.
